Whisk together pumpkin puree, skim milk, egg white, vinegar, and mix in a bowl.<\/li>\n
In a separate bowl, whisk together flours, sugar, baking powder, allspice, cinnamon, and nutmeg.<\/li>\n
Fold the liquid ingredients into the dry ingredients and blend just until mixed.<\/li>\n
Spray a skillet with canola oil spray over medium heat and put approximately 1\/4 cup of mixture on skillet to cook.<\/li>\n
Cook pancakes for 2-3 minutes per side.<\/li>\n
Serve with maple syrup, if desired. Recipe will make 4-6 pancakes. Enjoy!<\/li>\n<\/ol>\n<\/div>\n<\/div>\n
