Let me tell you the truth! Even though I am a dietitian, the word “meal” is just not one of my favorites. Often when I tell patients/clients they need to eat within 90 minutes of waking up in order to really start their metabolism and burn more calories throughout the day, they shut down right away. “Meals” can be overwhelming.
If you are one of those people that are currently not eating breakfast, (and no, coffee doesn’t count) then start as simple as a piece of fruit and string cheese on the way to work, a handful of almonds and fruit, or even a piece of whole wheat toast with some natural peanut butter on top. These are just a few ideas for those breakfast beginners out there and they have the ingredients needed for sustained energy throughout your morning- fiber AND protein.
If you can carve out an extra 15 minutes before you are off to work, then try my egg scramble… all you need are any extra veggies that are in your kitchen. I used bell peppers, mushrooms, and asparagus. Take about 3-4 minutes to sautee your veggies in 1-2 tablespoons of canola oil, add your egg mixture (one egg white mixed with one whole egg), throw in some minced garlic if you prefer and I always use pepper. If you need more flavor, I recommend Trader Joe’s “21 Seasoning Salute.” – it’s a great way to add more flavor to any meal. Cook an additional 1-2 minutes, until the egg is well done.
And I love to add tomatoes, salsa, or avocados on the side- whatever I may have in the house! Enjoy!! Let me know how you make your egg scramble or what is your fave quick breakfast idea?

My favorite breakfast is a green smoothie. I stuff half the blender full of spinach or kale, add 1 frozen banana, frozen strawberries, flax seed, blueberries, celery, baby carrots, avocado, and almond milk. The frozen bananas eliminate the need for ice. I did have to buy a nice blender ($100 Kitchen-Aid) to get this to blend to a smooth consistency. Since blending foods increases the nutrient absorption rate from 25% to 90%, I consider green smoothies to be my secret weapon to great health!
