I’ve always liked sweet potatoes (I am from Tennessee, after all…I think it’s a requirement!) However, since having my son, the sweet potato intake in our house has literally tripled because he looooooves sweet potatoes! They are always on my grocery list these days and we are cooking them one way or another every single day. One of the best things about them is that they can be eaten at any meal of the day.
In my recently released diabetes cookbook, I have several recipes that contain this superfood. For all of my clients, whether they have diabetes or not, I like to recommend sweet potatoes over white potatoes not because they are lower in carbs (because they are not), but because they are rich in nutrients and boast a bit more fiber. They are particularly high in potassium, which can help improve our blood pressure and they are a great source of Vitamin A, which helps us fight infections and maintain healthy skin and bones. I love that my son enjoys sweet potatoes daily, but let’s be honest…I get tired of the good ole’ baked sweet potato. So these Roasted Sweet Potatoes Fries are great to add to the mix.

Some mornings, I have sweet potato fries and simple scrambled eggs for breakfast…random, but delicious! 🙂 And some days, we have them as an afternoon snack. It’s really great for any time of the day and my favorite part is that it’s so easy to customize the spices. I add extra cayenne when I’m not sharing with my son and have been known to throw some nutmeg on there as well. The key is to make sure they are slightly browned and crispy…soggy fries are the absolute worst! Ugh.
If you have diabetes, this is definitely a diabetes-friendly snack as well. Be sure to include it with a serving of protein at whatever meal you choose, and enjoy!

I just read this to my a co-worker, and she likes them with sour cream.
Personally, I prefer the cinnamon, but I will definitely try the cayenne! I just have trouble getting them crispy. Now I know to cook them longer. Thanks.

Having an air fryer allows you to heat leftover SPFs and makes them crispy again!!
