Anyone that has ever had a meal at the Zanini household knows that I am a salt-free cook. It is just our way of trying to lower the sodium in our diet. When a recipe calls for salt, I will make a substitution…double the other spices, replace with garlic powder, etc. Many people feel that salt free = bland and boring. Not necessarily. But if you  omit salt without including additional spices, herbs or other seasonings, then yes, you will have a less-than-flavorful dish on your hands.
I also enjoy simplicity in the kitchen, especially during the week when I don’t have as much time on my hands. Maybe it goes back to one of my favorite quotes…

With that being said, we always make our own salad dressing because it takes all of two minutes and is 100% sodium free. When you compare this to a commercially prepared salad dressing, this makes is a huge difference! This particular recipe also contains only the healthiest type of fat from the olive oil- not of the saturated fat that will raise your bad (LDL) cholesterol.
Feel free to keep the leftover dressing stored in a air-tight container on your kitchen countertop for up to a week (if you don’t use it all before then!) And if you aren’t a spicy fan, feel free to lower the amount of red pepper flakes.
