Can I share with you something I truly appreciate? Authenticity. Being relatable is so important…especially in our tech-filled world. But it’s not always easy. I personally try to think about this before I create anything for others with diabetes or prediabetes. Will this be helpful? Can they relate to what I’m saying? Will this be real advice?
And today, on a slightly out-of-the-box blog post, I’m so excited to introduce you to some very authentic friends of mine. 🙂 Chef Sara Haas, RD and Elizabeth Shaw, MS, RD, CLT. These inspiring women have been sharing their infertility journeys and just this past month, they introduced their first book, Fertility Foods Cookbook: 100+ recipes to nourish your body, to the world.
Being a fellow author, I realize books are quite the labor of love. Writing a book takes alllllll the emotions, so I appreciate their willingness to share their very personal stories and expertise with all of us.
I also had the chance to test some of their recipes before they were published and every single one was a homerun for me. I’ve been looking forward to the release date of their book for months now. These recipes are about SO much more than just improving your chance of conception. They are wholesome, real food recipes that are not only delicious and simple to prepare, but are packed full of vital nutrients that are essential to good health, and good blood sugar control! Real, nourishing foods always win, ya’ll!
One of my favorite recipes from their book is the Stone-Ground Mustard and Apricot Glazed Salmon. We are making it every week in my house now, it’s that good! Not only is salmon a great source of high-quality protein, but it’s also rich in omega-3 fatty acids which are an essential type of fat that must be supplied by the foods we eat.
Unfortunately, most people aren’t getting enough omega-3 fats in their diets which can compromise their health. Just a few of the important roles that this powerful nutrient plays in the body include:
- Reducing cardiovascular risk by preventing plaque buildup in the arteries and lowering cholesterol levels
- Improving mood. One study showed that adequate intake of omega-3’s reduced rates of depression both during and after pregnancy, making it an ideal “fertility food”
- Reducing inflammation. Inflammation is said to be the root cause behind all chronic diseases. This is of special importance to those living with diabetes because chronically high blood sugar levels cause inflammation and fat deposits in the arteries, which can clog arteries.
Additionally, salmon contains a favorable fat-to-protein ratio that slows the absorption of carbohydrates to keep blood sugar levels stable.
This recipe is low in carbohydrates (only 4 grams per serving) and can be ready in less than 15 minutes, making it an excellent choice for those low on time. I hope you love it as much as I do!
