Enter this breakfast solution…my Southwestern Egg Bake. It’s a low-carb and blood sugar stabilizing one dish meal. My favorite kind of easy! With the perfect combo of veggies, protein, and high fiber carbs, it will keep you full for hours and prevent mid-morning cravings or slumps in energy.

If you are looking to add more carbs, I love to put a serving of the egg bake on top of a whole wheat tortilla, or even in a whole wheat pita, and top with a few slices of avocado. Sooooo good!
