Who would have ever anticipated that cauliflower would be the trendiest vegetable of the year? I’m not going to lie, I did not grow up a ‘cauli-lover’. But I’ve definitely grown to love it for its versatile, low-carb swap perks! 🙂
So… I jumped on the cauliflower rice bandwagon, but added my own twist!  Today, I’m sharing one of my absolute favorite recipes from my cookbook, Mexi-Cauli rice. Whether you are looking for a new way to enjoy a classic veggie, or you want to find a rice alternative, this recipe has the flavor to keep you satisfied and the fiber to stabilize your blood sugar levels.
Let’s face it, trying to minimize carbs and maximize the Mexican flavor we all love can be a little tricky with the staples being hefty portions of rice, tortillas, corn and beans… enter mexi-cauli rice and voilà … a much more balanced plate, saving you 37 grams of carbohydrates per cup compared to traditional Spanish rice!
And for you rice lovers out there who think there is no way in the world this veggie alternative will ever impress you, the awesome thing about this cauliflower rice is that its texture is surprisingly similar to the real stuff after it’s prepared. Give it a try…it might surprise you!
Cauliflower speaks for itself with it’s versatility in the kitchen and the nutritious benefits it brings to our bodies.  It is packed with Vitamin C, Vitamin K, Vitamin B6, potassium, folic acid and a hefty dose of fiber to keep our gut functioning optimally and our hunger at bay.
Cauliflower also contains a powerful compound called sulforaphane, which is currently a hot topic in the dietary realm of cancer research. It has been found to exert chemopreventative properties working to combat against the development and progression of cancer cells (1). Yes, another reason, to get those vegetables in one way or another!

With one serving being only 68 calories and 8g of carbohydrates, to make this dish whole, serve with a lean protein such as pre-marinated baked tofu, chicken or salmon, a serving of black or pinto beans and…. maybe some homemade guacamole & pico de gallo YUM! 🙂
