So I have this amazing Southern cookbook from a church where my mom grew up in Ashland City, Tennessee. When I have my “Southern” cravings, I get it out to find a tasty home style recipe. This week I was really excited to find the Pumpkin Bread recipe since I am SO ready for fall! Of course, I had to make just a FEW modifications to the recipe.
Here are the original ingredients:
- 1 3/4 cup all-purpose flour
- 1 1/2 cup sugar
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1/2 tsp salt
- 1 cup 100% canned pumpkin
- 1/3 cup water
- 1/2 cup Canola oil
- 2 eggs
- 1/2 tsp vanilla
- 1/2 c chopped nuts
- 1 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1 c sugar
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp allspice
- 1/2 tsp nutmeg
- 1 c pumpkin
- 1/3 cup water
- 1/2 cup Canola oil
- 2 eggs
- 1/2 tsp vanilla
- As you can see, I omitted the chopped nuts and salt. I also used 1/2 cup less of sugar and changed some of the flour to include whole wheat. Small changes. Does it make a difference? Absolutely. For the entire loaf of bread I saved 360 calories from lowering the sugar and an additional 400 calories from omitting the chopped nuts. I skimmed 1,150 mg sodium from skipping the sodium (it wasn’t needed…there was already baking soda which has sodium) and added 12 grams of fiber from switching some of the flour to whole wheat. Best of all… it still tasted DELICIOUS!
- Mix together flour, sugar, baking soda, cinnamon, allspice, and nutmeg.
- Make a well in center of the flour mixture and add pumpkin, water, oil and eggs.
- Mix by hand until smooth, then add vanilla.
- Baked in 2 loaf pans in oven at 350 degrees for 45 minutes.
We saved one loaf for ourselves and I packaged two other loaves to give to some friends. Such an easy, seasonal gift!
And in case you wanted to get even more ambitious, you can always substitute Egg Beaters for the eggs, applesauce for the oil, and add in some ground flax seed.
