I’m so excited to officially share with you all that my first book is now only days away from being in a bookstore near you! I seriously can’t believe it’s here! It still seems completely surreal, but it’s happening!
After almost 10 years working as a Registered Dietitian, I knew there was a need for a new kind of cookbook. I wrote Eat What You Love Diabetes Cookbook for anyone that loves to enjoy their food, but also desires to improve their health…and yes, you can do both at the same time! Over the years, I have educated thousands of individuals with diabetes how to successfully control their blood sugar using food and lifestyle changes, and I’m so glad this book will make it possible to help many more people achieve the same results!
In this book, you won’t find rules. There is no food that is always off limits. The emphasis is on balanced meals that nourish our bodies and help improve our blood sugar. You also won’t find any white sugar, white flour, or artificial sweeteners in the recipes. You will find every comfort food favorite that you crave- mac and cheese, chicken pot pie, pizza, cherry cobbler, and more!
Being raised in the South taught me how important it is to share our food with the people that we love. I have found that many times people with diabetes feel like they have to be on a ‘special’ diet and eat very differently than the family and friends they are sharing their meals with. This is simply not the case, so it was important to me to make recipes that are appealing and appetizing to everyone, not just those that are concerned about their blood sugar. In fact, many of the recipes in this book are personal family favorites that I make every single week and have shared with many friends over the years.
Eat What You Love Diabetes Cookbook is currently available for pre-sale, and will be officially released on November 1st, at the beginning of Diabetes Awareness Month. To celebrate the launch, I will be sharing my favorite recipes from the book every week. This week, I am starting with breakfast, and some yummy muffins! The Buckwheat Apple Muffins are full of flavor and perfect for this time of year when apples are in season. They also contain flaxseed meal (ground flaxseeds) and walnuts- two great sources of omega-3 fatty acids that have been shown to reduce risk of heart disease and even improve our moods! I encourage you to make a batch and freeze any leftovers so you can have a quick homemade breakfast addition on any busy day of the week.
