Chia seeds contain powerful, easy-to-chew health benefits.
In recent years, scientists have discovered that the edible seed that is used to grow the famous “Chia pet” plants are actually packed full of nutrients. Just one tablespoon of chia seeds provide a whopping 5 grams of fiber. They are also rich in omega-3 fatty acids which have been shown to increase our HDL cholesterol (also known as our “good” cholesterol). There is no need to grind chia seeds in order to experience their plethora of health benefits. Try adding 1-2 tablespoons of chia seeds to your oatmeal, smoothies, yogurt, or even soy milk. Chia seeds expand in liquids to create a delicious tapioca-like consistency.
In our house, we love adding Chia seeds to Vanilla soy milk as an after-dinner treat. I just add 2 tablespoons of chia seeds to 4 ounces of soy milk and refrigerate about 1 hour. Then we drink/eat the mixture with a spoon. Seriously, it’s delicious. You will probably be surprised at how good something so nutritious can taste!

Try soaking 2 Tbsp of chia seed for 5 minutes in 3-4 oz of water to produce a nutritious chia gel that can be added to hundreds of recipes.
