Let’s be honest, salads aren’t always at the top of our ‘favorite foods’ lists. There have been so many times that I have eaten at a restaurant and thought ‘if only someone would just make me a salad like this at home, I would eat a salad every day!’ Can ya relate?! Well, bland and boring simply doesn’t have to be the way we approach lower carb and healthy eating. So…see ya later iceberg lettuce and ranch dressing…I’ve got something way better. 🙂
Of course, so many of those yummy salads we get when we are dining out at restaurants have loads of hidden sugar and salt, which is why we crave them. You may have heard this before, but research has shown that our taste buds regenerate approximately every 10-14 days. This is super important information, because it means we can retrain our taste buds to want and appreciate less sugar and salt. As we start to lower our intake of both of these flavor enhancers, we will start to notice the natural goodness real food provides. And on the flip side, it will also be obvious when we eat too much…which is a great thing.
My goal when creating this recipe was to make something that checked off all the boxes…whole foods, fruits, vegetables, healthy carbs, lean protein, and heart-loving fats. Having this combo helps the salad be ultra-filling and satisfying, since they each provide energy at different times. And as a busy mom with a toddler…let’s just say I need alllllll the energy.

Just ran across this salad. It looks delicious! I don’t have blueberries right now so I’m going to substitute strawberries. Okay, excuse me while I make lunch. lol
