Everyone needs a delicious weeknight meal that the entire family enjoys. This is the current go-to in my family. 🙂  It makes enough for leftovers the next day, which is always a bonus!
The best part is that it is a one tray meal…so easy! It’s a complete, balanced meal full of nourishing ingredients that are easy to find in your local grocery store.
This is also a great family dinner for anyone watching their blood sugar levels. Since the total carbohydrates in this meal are low (25 grams per serving), it’s high in fiber (8 grams), and contains no added sugar, you can guarantee it will be a satisfying meal that will not spike blood sugar levels or leave you hungry an hour later.
Feel free to substitute any other veggies you prefer. Jerusalem artichokes, beets, and potatoes also work really well with this recipe.
