Pistachio Ginger Snaps
Makes 10 cookies
Prep time: 5 minutes, plus 10 minutes rest time
Cook time: 12-15 minutes
Ingredients
- 2 tablespoons olive oil
- ¾ cup almond flour
- ½ teaspoon vanilla extract
- 2 tablespoons maple syrup
- ¼ teaspoon salt
- 2 teaspoons ground ginger
- ¼ teaspoon ground cloves
- ¼ teaspoon ground nutmeg
- ¼ cup Wonderful Pistachios No Shells Lightly Salted, crushed into small pieces
Instructions
- In a medium bowl, add the olive oil. Stir in the almond flour, vanilla extract, maple syrup, salt, ginger, cloves, and nutmeg.
- Preheat the oven to 350F
- Form the dough into a disc and freeze for 10 minutes.
- Place the dough between two sheets of parchment paper and roll so that it is about ¼ inch thick
- Use cookie cutters to shape the cookies, or cut them into pieces, and carefully transfer to a baking dish. Bake for 15 to 17 minutes, until just starting to brown. Remove and let cool for 10 minutes to crisp. Serve.
