I haven’t always been the biggest salad lover. (I knoooow, it should be part of the job, right?)
But let’s be honest, salads aren’t always the most exciting choice on the menu.
I mean, definitely don’t get me wrong…  I love vegetables – roasted, raw, crudités, you name it and I’m a fan. But basic green salads just aren’t my style. So when I’m making a salad you will usually not find it on a ‘bed of lettuce,’ I just need a little more creativity!
Today, I’m excited to share my all-time favorite entree salad recipe. I honestly eat this multiple times per week (the dressing is addicting!). I’ve been holding onto this recipe for a while now, but over Christmas I made it for my family and every single person raved about it! And for that reason, I knew I needed to get it on the blog ASAP.
It is a complete, satisfying meal. You can easily prep all the ingredients on the weekend and eat this throughout your busy week. And rest assured…no leafy green veggies here, but it is still incredibly nutritious!

This salad is low carb, high fiber, and sure to please anyone! It’s also a great for weekday lunches- simply prep on the weekend and split into four containers. You can go ahead and put the dressing on the salad, it won’t get soggy. Enjoy!
