I love fall weather! But I have to be honest…with temperatures still in the 70’s here in LA, I’m just not in the mood for the pumpkin flavored everything quite yet. However, I’m all about simple smoothies that pack in the MOST nutrition as possible.
In this smoothie I paired a rich source of iron (spinach) and a great source of vitamin C (pineapple). The two are a power duo because vitamin C actually helps us absorb iron better. It’s always easy to throw in some extra spinach into a smoothie because it doesn’t change the flavor, yet the health benefits are huge!

Why do you use ‘unsweetened almond milk’ in lieu of ‘low-fat or fat-free cows milk’?

Hi Peggy, great question. Unsweetened almond milk has only 1 grams of carbs per cup, compared to cow’s milk that has 12 grams of carbs per cup. It’s a small change that can help lower carbs, but the recipe will be just as good if you substitute another favorite type of milk for the almond milk.
